la_fairytales_gingerbread1Cerritos has an interesting collection of links including:

Folk and Fairy’s Sources for Analysis and Interpretation of Folk and Fairy Tales

USM’s Jack and the Beanstalk, Jack and the Giant Killer Project.

a text and image archive containing several English versions of the fairy tale. The Jacks presented here represent some of the more common varieties of the tale from the English-speaking world in the eighteenth, nineteenth, and early twentieth centuries.

Hans Christian Andersen’s 168 tales, as translated in 1872, in chronological order.
